What You’ll Need:


• Chemex brewer

• Chemex filter

• Freshly ground 11th R Coffee beans (medium-coarse grind)

• Hot water (filtered, about 200°F / 93°C)

• Digital scale

• Timer

Coffee-to-Water Ratio:


• Use 1:16 ratio (e.g., 30 grams of coffee for 480 ml of water)


Steps to Brew:


1. Prepare the Chemex and Filter:

• Fold and place the Chemex filter into the brewer, ensuring the triple-layered side faces the spout.

• Rinse the filter with hot water to remove any papery taste and preheat the Chemex. Discard the rinse water.


2. Add Coffee Grounds:

• Add 30 grams of freshly ground 11th R Coffee (medium-coarse grind, similar to sea salt) to the Chemex filter.

• Level the coffee bed for even extraction.


3. Start the Bloom:

• Begin by pouring 60 ml of hot water (double the weight of the coffee) over the grounds in a circular motion, ensuring all grounds are saturated.

• Let it bloom for 30-45 seconds. This allows the coffee to release trapped gases and ensures an even extraction.


4. Main Pour:

• After blooming, begin pouring the remaining hot water in slow, steady circles, starting from the center and moving outward.

• Pour in stages until you reach a total of 480 ml of water.

• Aim to complete pouring by 2:30 to 3 minutes.


5. Brew Time:

• The total brew time should be around 4 to 4:30 minutes. Adjust the grind size if it’s too fast or too slow (finer if too fast, coarser if too slow).


6. Enjoy:

• Once the water has fully drained through the grounds, discard the filter and give the Chemex a gentle swirl to mix the brew.

• Pour into your favorite mug, and enjoy the bright, clean flavors of your perfectly brewed Chemex coffee.


Pro Tip: Pre-wet your filter to eliminate any papery taste and use filtered water for a cleaner, more refined cup.
